Lemon bar yumminess!

Calling all the barefoot contessa fans... or bakers.. or cooks...
(Oh by the way, I love her.)
I've been baking a gorgeous lemon bar with yogurt today, and thought I would share the delicious recipe..
Make sure you have a cute little apron on, 2 mixing bowls, measuring cups/spoons, a loaf tin and a nice hot oven at 160C. 

Cake
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup yogurt
1 1/3 sugar
3 eggs
2 tsp grated lemon zest (I add a little more as I like it lemony)
1/2 tsp vanilla extract
1/2 cup vegetable oil
1/3 cup lemon juice

Glaze
1 cup icing sugar
2 tbsp lemon juice

Grease loaf pan and butter it up, followed with a dusting of flour. Pre-heat the oven to 160C
Sift together, the flour, baking powder and salt. 
In another bowl, whisk together the yogurt, just 1 cup of sugar, the eggs and lemon zest and Vanilla. 
Mix in with the flour mix. Then fold the oil into the batter. 
Cook for 50 minutes. 
Meanwhile, cook lemon juice with remaining sugar, until it dissolves. 
When the cake is nice and golden brown (make sure you put a skewer into the middle of the cake and wait till it comes out clean, thats how you know the cake is ready), let it cool and then pour the sugar and lemon juice over it and let cool again. 

The best cooling method... on a window. try it. honest. 

Combine the ingredients for the glaze and pour over cake and let set. 

And then..... oh yeah EAT IT! It is so more-ish, you'll keep going back for more slices!
